Pasta Favourita – Chicken, bacon & mushrooms in a creamy sauce with fusilli

This Pasta Favourita recipe Serves 4
1 pkt cubes of pancetta or about 4 streaky rashers diced
2 chicken breasts cut into chunks
200gm mushrooms quartered
2 cloves of garlic thinly chopped
100ml white wine
Handful flatleaf parsley
400 gms of fusilli ( we use DeCecco)
Crisp up the bacon in a large pan on a moderate heat in a little olive oil
Add the garlic, don’t let it brown, then add the mushrooms.
Soften the mushrooms, stirring regularly
Add the chicken.
Fry until the chicken begins to brown, then add the wine
Cook until the wine has evaporated, then add the cream, reduce until it takes on a yellow colour or until it coats the back of a spoon, if at this stage you don’t think it’s saucy enough, add a little more cream or water.
Add parsley and a good grate of black pepper. Taste at this stage it might need salt, depending on the bacon.
While all this is happening cook the pasta according to instructions on pack.
When it’s cooked, drain & add to pan, giving it a good stir to amalgamate.
